Apple Zucchini Muffins

Ingredients:

  • ¾ cup shredded zucchini

  • ¾ cup shredded apples

  • ¾ cup applesauce

  • 2 eggs

  • ⅓ cup maple syrup

  • ¼ cup + 1 tbsp melted coconut oil

  • ½ cup Greek yogurt

  • 1 tsp vanilla

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 tsp cinnamon

  • 1¾ cups + 1 tbsp flour


Directions:

  1. Preheat the oven to 375°F and prepare a muffin pan with liners or nonstick spray. Place the shredded zucchini and apples in a strainer. Press down to remove as much liquid as possible.

  2. Transfer the zucchini and apples to a large mixing bowl.

  3. Add the eggs, applesauce, coconut oil, maple syrup, yogurt, and vanilla. Whisk until well combined.

  4. In a separate bowl, whisk together the baking powder, baking soda, salt, cinnamon, and flour.

  5. Add the dry ingredients to the wet ingredients and mix until just combined — do not overmix.

  6. Scoop the batter evenly into the prepared muffin pan.

  7. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
