Apple Zucchini Muffins

Ingredients:
¾ cup shredded zucchini
¾ cup shredded apples
¾ cup applesauce
2 eggs
⅓ cup maple syrup
¼ cup + 1 tbsp melted coconut oil
½ cup Greek yogurt
1 tsp vanilla
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp cinnamon
1¾ cups + 1 tbsp flour
Directions:
Preheat the oven to 375°F and prepare a muffin pan with liners or nonstick spray. Place the shredded zucchini and apples in a strainer. Press down to remove as much liquid as possible.
Transfer the zucchini and apples to a large mixing bowl.
Add the eggs, applesauce, coconut oil, maple syrup, yogurt, and vanilla. Whisk until well combined.
In a separate bowl, whisk together the baking powder, baking soda, salt, cinnamon, and flour.
Add the dry ingredients to the wet ingredients and mix until just combined — do not overmix.
Scoop the batter evenly into the prepared muffin pan.
Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
