Black Bean Brownies

Ingredients:

  • 1 can black beans

  • 3 eggs

  • 3 tbsp coconut oil

  • 1 tsp vanilla extract

  • 1/4 cup cocoa powder

  • 1/3 cup sugar

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup chocolate chips


Instructions:

  1. Preheat oven to 350 degrees.

  2. Puree the black beans in a food processor until a smooth, slightly thick paste forms.

  3. Add the oil as needed to help thin the mixture.

  4. In a large bowl, combine the bean puree, eggs, and vanilla, mixing until well incorporated.

  5. In a separate bowl, whisk together the cocoa powder, sugar, baking powder,

  6. and salt.

  7. Gradually add the dry ingredients to the wet ingredients, stirring until fully combined.

  8. Gently fold in the chocolate chips.

  9. Lightly grease a half sheet pan and line with parchment paper. Pour the batter evenly into the pan and smooth the top.

  10. Bake for 30–40 minutes, or until the brownies are set and the center no longer jiggles.

  11. Allow to cool before serving.
